Orange Sesame Baked Oatmeal with Cacao Nibs

This baked oatmeal with sesame seeds provides amazing nutrients including copper which is great for lowering cholesterol as well as beautifying hair and skin

Ingredients

  • 3 cups oats
  • 3 small oranges cut into small bite sized chunks (1.5 cups)
  • ½ cup sesame seeds
  • ½ cup cacao nibs
  • 2 cups almond milk
  • 1 banana
  • 8 dates
  • Very large chunk of ginger 2 thumbs worth - roughly 1/4 cup / 35g
  • 1 tsp vanilla extract
  • Optional: lime or lemon zest personally I like a little lime kick!

Instructions

  1. Preheat your oven to 175C (350F)
  2. Grease a medium sized baking dish with coconut oil
  3. Zest 1 of the oranges, add zest to blender. Peel and then cut the 3 oranges into small chunks.
  4. Get a large mixing bowl and add the first 4 ingredients to bowl (oats, oranges, sesame seeds and cacao). Set aside.
  5. Blend the remaining ingredients (almond milk, banana, dates, ginger, vanilla and lime zest) then pour overtop of the ingredients in the mixing bowl
  6. Mix everything together then pour into your baking dish
  7. If you like, decorate the top with thinly sliced orange rounds
  8. Bake for 35-40 minutes until lightly browned (it will still be soft in the middle)
