How to cook sweet potatoes for a healthy weekend breakfast

These beauties are full of Vitamins A and E for amazing skin, along with potassium (more than bananas!), copper for healthy muscles and taut skin, as well as the heart friendly phytonutrient quercetin.

Ingredients

  • 1 large sweet potato or 2 small, grated
  • 1 white onion grated and squeezed
  • 2 cloves garlic minced
  • 1 Tbsp ground cumin
  • 1 egg or chia egg: 1 Tbsp chia seeds to 4 Tbsp water and then let sit for 10 mins

Instructions

  1. Preheat frying pan on med-low heat
  2. On a grater or mandoline (I use the finer shredder on my mandoline), grate the onion and sweet potato. Add the sweet potato to a bowl. Give the grated onion a squeeze to remove the water before adding it to the bowl.
  3. Mince the garlic and then add everything else into the bowl and mix thoroughly.
  4. Melt grass-fed butter or coconut oil in the frypan and then cook the patties on each side for 15 minutes or until edges are brown and you can easily flip them.
